In our previous blog, we featured Pollo (Chicken) as one of the more popular types of meat used in Mexican Food. It offers a very flexible flavor profile that pairs well with common Mexican ingredients and seasonings. 

Here at Mazatlan Restaurant in Everett, WA, we offer a great selection of chicken specialties. Here are some of our favorites.


Pollo Monterey

This Mexican dish features seasoned grilled chicken breast stuffed with spinach, mushrooms, and Monterey Jack cheese. Glazed with light sauce and cheese. Serviced with rice and beans, sour cream, and Pico de Gallo. 


Arroz Con Pollo

This special dish is made with boneless chicken breast sauteed in a special sauce with mushrooms and onions. Served over a bed of rice and garnished with tomatoes, green onions, and Parmesan cheese.


Chicken en Mole*

This boneless chicken dish is slathered in a sweet Mexican sauce and served with rice and beans. 


Pollo a La Crema

This creamy chicken breast and mushroom dish is prepared with a delicious cream sauce made with 3 different kinds of cheese and served with rice and beans.


Carnitas de Pollo

This savory chicken breast dish is sauteed with bell peppers, zucchini, carrots, and onions. It’s served with guacamole, rice, and beans.
