Mexican Food Chronicles - Cheesy Quesadillas
Although we all know and love quesadillas today, few know the story of how they came about. Quesadillas first appeared in northern and central Mexico during the 16th century. According to The History of the Quesadilla by Tyler Robinson, tortillas were an important component of traditional Mexican cuisine, beginning with the corn tortilla. As time went on, people began experimenting with different variations of tortillas, including the flour tortillas we know and love today. The main purpose of the tortilla was to hold a variety of fillings, including the traditional Oaxaca cheese.
Now, centuries later, cheese quesadillas remain one of the most popular Mexican foods for people of all ages.
